We'll be replacing our Email software sometime this year and we need to update employee email addresses that are stored in  AX 2012 R2 tables.  Basically we need to replace employee email addresses that are in the current format that uses the employee's initials with an email address in FirstName.LastName format.

So far we know that the LogisticsElectronicAdress and SysUserInfo tables store email addresses, and we're in the process of writing code to update the employee email addresses in those tables.

I've also generated a list of customers whose Print Management settings indicate that their sales invoice should be mailed to one of our employees.  Someone in our A/R dept will manually update the email addresses.

In what other tables in AX 2012 R2 are email addresses stored?  Thanks in advance.

I think that there's quite a lot of tables.  You can start by searching the AOT with "type:"Extended data type" email".  Fortunately they're not all String.  Pick an EDT (like "Email") and right-click "Find references" and look for "dynamics://Table/.../FormStringControl".
